Blending warming spices with rich tomato sauce and golden roasted aubergine, this recipe is easy to make, packed with fresh ingredients, and bursting with bold flavours. It's the perfect, plant-powered dish to remind you that eating well doesn't have to be boring.

Ingredients
- 4 aubergines – cut into 1cm thick slices
- 4 tbsp extra virgin olive oil
- 2 onions – chopped
- 3 garlic cloves – crushed
- 1 tbsp garam masala
- 2 tbsp flaked almonds
- 1 tsp ground cumin
- 1 tsp ground coriander
- Pinch dried chilli flakes – optional
- 1 pinch cinnamon
- 600g passata
- Salt and pepper
How to make it:
- Preheat oven and prep aubergine: preheat your oven to 180°C / 160°C fan / gas mark 4. Generously brush each aubergine slice with 2 tbsp olive oil and place in a single layer on a baking tray.
- Roast aubergine: cook for 20–30 minutes or until tender and golden. Turn over midway through cooking.
- Sauté onions: meanwhile, heat the remaining 2 tbsp olive oil in a pan and sweat the onions on low heat for 5–10 minutes.
- Add aromatics: add the garlic, garam masala, cumin, coriander, and cinnamon. Cook for a couple of minutes until fragrant.
- Simmer sauce: pour the passata into the spiced onions and stir well. Add the dried chilli flakes (if using), and season to taste with salt and pepper.
- Assemble bake: in a large glass oven-proof dish:
- Spoon in a third of the tomato sauce on the bottom.
- Layer with half the aubergine slices.
- Cover with another third of tomato sauce.
- Add the remaining aubergine slices.
- Finish with the rest of the tomato sauce.
- Bake: sprinkle over the flaked almonds. Bake in the oven for 25–30 minutes.
