Celebrate summer with this gorgeous chicken salad with homemade honey mustard dressing. Refreshing, sweet, and savoury all at the same time! Enjoy golden pieces of halloumi, creamy avocado, cherry tomatoes, thinly sliced red onion, and fresh gem lettuce, all tossed together for a satisfying summer main.

How to make it:    

  1. Cook chicken: slice your chicken into strips, season with salt and pepper, then wash your hands. Add a drizzle of olive oil to a pan and cook chicken for 10–15 minutes until fully cooked through (no pink meat remains). 
  2. Prep salad: while the chicken is cooking, slice all your vegetables and halloumi. 
  3. Cook halloumi: add a drizzle of olive oil to a separate pan on medium heat, then cook the halloumi for 3 minutes on each side until golden brown. 
  4. Make dressing: for the dressing, mix all wet ingredients (honey, mustard, olive oil, vinegar, garlic) into a small bowl, then season with salt if needed. 
  5. Assemble: once cooked, place the chicken and all other food (vegetables and halloumi) into a large bowl. Pour over the dressing and toss the salad until evenly coated. 
  6. Serve: serve with a handful of chopped almonds for some added crunch.
