We've got a festive recipe to warm you up just in time for Christmas. Our Baked Cranberry Rosemary Chicken is a true celebration of flavour. Succulent chicken thighs are baked to perfection with tangy cranberries and fragrant rosemary. It’s a simple yet impressive dish, perfect for a special meal.

Ingredients
For the cranberries:
- 2 cups fresh cranberries
- 1/3 cup brown sugar
- 2 tbsp white wine vinegar
For the chicken:
- 6 chicken thighs
- 6 garlic cloves – minced
- 1 ½ tbsp chopped fresh rosemary (or 2 tsp dry rosemary)
- 1 tsp paprika
- 1/4 cup extra virgin olive oil
- 1 lemon – juiced
- 2 tbsp white wine vinegar
- 1 large yellow onion – chopped
- ½ cup low salt chicken stock or water
- Salt and pepper
How to make it:
- Prep the oven & ingredients: Preheat your oven to 200°C /180°C fan/ gas mark 6. In a small bowl, combine the cranberries, brown sugar, and 2 tbsp of white wine vinegar and set aside.
- Prep the chicken: Pat the chicken thighs dry and season with the minced garlic, salt, pepper, rosemary, and paprika.
- Marinate: In a separate bowl, mix the olive oil, lemon juice, and white wine vinegar. Add the chicken and chopped onions and mix everything using clean hands. Leave to marinate for about 15 minutes.
- Combine: Place the marinated chicken and onions into a large baking dish, including any liquid from the marinade. Then add the chicken stock and the cranberry mixture.
- Bake and serve: Bake for 35-40 minutes, or until the chicken is fully cooked. Serve immediately, making sure to spoon some of the delicious sauce over each piece of chicken.
